Various items can be prepared out of Karonda fruit. The fruit tastes sweet in ripe state; the unripe ones have sour taste that also contains a sting of astringent.
The matured fruit contains pectin in high amount which is the main ingredient in the preparation of various products like squash, jelly, syrup, jam, sauce, etc. Globally, they are in great demand. The fruits in unripe state are best to produce chutney and pickles.
The raw matured fruits can be processed to produce fine wine that contains alcohol about 15%. The wine produced has good market and generates good income out of it.
